Ingredients:
Directions:
  1. Soak the rice noodles in water overnight. (This step can be done at least 4 days in advance)
  2. Prepare a wok on high heat. Add the oil and get hot. Add the shallots, garlic and tofu and cook for 4 minutes, until slightly golden
  3. Add the fish sauce, chili flakes and tamarind paste. Mix well.
  4. Add the noodles and mix for 3-4 minutes until they are soft but not sticky.
  5. Move the noodles over and add the egg, let it almost cook through for about 1 minutes and then fold the noodles over it and mix it all together.
  6. Turn off the flame and add the bean sprouts, scallions and peanuts.
  7. Use lime and cilantro as garnish. Serve hot.
Notes & Tips:

Feel free to add chicken instead of tofu! Fish sauce has a very strong and not popular smell when being cooked, but the flavor is worth it!

Leftover tips for tomorrow’s lunch:

I had no faith in the Pad Thai tasting good the next day, but it really does, at room temp or slightly reheated!
Use the leftover salad (without lettuce) as a garnish to your pad Thai and use fresh lime and cilantro to take it to a whole new level!
