There is nothing like a good turkey sandwich! It needs to be great bread that is toasted on the outside and soft on the inside. It needs to have the right amount of bread to turkey ratio and lots of flavor. I know there is an extra step here with placing the lettuce and avocado into a bowl and dressing it before putting it in the sandwich but this little trick is the secret to all sandwiches that have lettuce in.
I know this lasagna seems like it has an extra step of making the tomato sauce but it is so quick to just throw it all in a dish and stick it in the oven while the sweet potatoes are roasting! If you really don’t want this step feel free to use good quality ready made tomato sauce.
Ok, before you ignore this recipe listen up! Even if you don’t like coconut or curry or anything in this recipe, make it once and you will shock yourself in how incredibly delicious it is. I have made this dish for the pickiest of clients who say they don’t like any of these ingredients but when it is put together it will shock your palate with flavors you didn’t know existed and you didn’t know you have been missing all these years!
I served this with a side of grilled whole grain bread. I love pulling apart the fish and mixing it into the tomato salad and putting it on top of the bread like bruschetta (Get a grill pan on high heat and add the bread for 3 minutes per side, no oil needed)
The ingredients in this dish may surprise you, but the sweetness of the beets compliments the spice of the pepper and are such a nice and new blend to the comforting flavor of ground meat!
