These muffins are addictive, moist and perfect in every way. If you want them to be more dessert-y add the chocolate chips. If you want them to be more breakfast-y then leave out the chocolate.
These really take under 10 minutes to make and if you have pretty little cupcake papers, use them! I love these little muffin tins because there is no clean up and they look divine! If you would rather make a large quiche, use the standard round pan or tin and this recipe might even make 2 of them!
These are like mini pizzas and go great with a side of warm tomato sauce to dip them into. They also reheat well! Feel free to add your own “toppings” instead of sundried tomato and spinach, you can add what you love!
