The chickpeas can be made up to 4 days in advance and then you can whip this dish up in minutes. Also you will want those chickpeas in your fridge to throw into other salads or just eat as a snack!
This dish is surprisingly filling, I figured 2 sweet potatoes per person, but if you are serving a lot of other things then figure ½ to 1 sweet potato per person.
I know that grilling onions seems like an extra step, but I promise it’s worth it and is so quick! I like to make double the amount and have for future salads, eggs, sandwiches or pastas.
