Time saver alert: Did you know that if you slice butternut squash really thin you don’t have to peel it?

Chutney is a sauce commonly used in the cuisines of the Indian subcontinent. Chutneys vary in flavor and ingredients but are usually on the sweet side with a kick. Here is my version in this one-pot wonder.
This salad is so filling and can be a whole meal in itself. If you want it to be dinner by itself, feel free to add leftover noodles, chicken, cheese, fish, meat or tofu that you may have ‘lying around’.
If you were ever a person who bought guacamole already made, you won’t ever again after tasting this salad. You can make this into guacamole if you wish, just by mashing the avocado first and then adding the dressing. Keep the pit with the salad until ready to serve- it will maintain its beautiful green color instead of browning! This salad goes so well with sunnyside up eggs, chips to dip, sandwiches, fish… Make extra but it only will last another day or two in the fridge.
Besides being a visually beautiful dish, this salad’s combination of salty and sweet will have you going back for seconds and thirds! Roast a few extra heads of garlic to spread on crackers, breads or challah!
