Amba is a tangy mango pickle condiment which originated in India and became popular in Middle Eastern cuisine. You can find it at almost every falafel and Shawarma shop in Israel! This is my quick version of how to incorporate some of the flavors without having to have dehydrated lemons on hand!
Let the onions sit in the dressing for at least 5 minutes before serving to marinate them and take off their sharp taste. This salad is great because it has details to it but can be done in minutes without having to cook anything!
Eating sprouted beans has so many health benefits and is packed with vitamins. In Israel you can find them in most grocery stores, already sprouted. If you can’t find them and don’t feel like sprouting your own you can always add a can of chickpeas to this recipe!
This is a great base salad, if you want to turn it into a meal, add chicken, tuna, sliced steak, grilled tofu, goat cheese, brie cheese, or even cottage cheese. Adding turmeric to the salad dressing, doesn’t change the flavor, but creates a golden yellow color to the dish and lots and lots of health benefits even in that small amount!
Feel free to substitute oranges for tangerines, or even clementines – just double the amount because they are small!
