This is a great recipe to play around with. If you add other vegetables like peppers, onions, tomatoes, mushrooms or fresh herbs, it will taste better if you saute them first and then add them to the egg mixture. I like using little dessert cups because I don’t have to clean a muffin tin after, if you use them, bake them about ten minutes longer because they are taller and bigger than muffin tins. Don’t worry when you see the egg muffin collapse a little after coming out of the oven, it is supposed to do that and will taste delicious! This is great for kids school lunches, breakfast, lunch or dinner! Use them to dip in soup instead of bread!
This is my version of the popular dish. I love fresh oregano but if you don’t have it basil, rosemary, thyme or mint will do the trick!
This is a great dish because it really is 10 minutes of prep and why spend all the time making individual calzones when you can make one large one!! Make an extra dough and put it in a sealed bag in your freezer for another calzone or pizza.
Steak tips are just cut up pieces of amazingly juicy grilled steak – instead of having one whole. I usually like my steaks plain with salt and pepper but this is a fun alternative that will also taste great the next day!
Edamame are soybeans in a pod that are found in the cuisine of China, Japan, Korea and Hawaii. They are usually boiled or steamed and served with salt. I took them to another level, and I promise you will never eat them with just salt ever again!
