This is-a-meal in one. If you don’t feel like roasting butternut squash or making rice and want this recipe to be even quicker, you can leave it out. Feel free to add a can of chickpeas to make it filling! You can make the rice and butternut squash up to four days in advance, and if you are already doing that, marinate the turkey breast for an even better flavor!

I created this recipe because so often I crave pasta and meat sauce and this is a carb free alternative and I cut the cauliflower in pieces that remind me of ziti!

Cooking the tofu directly in the white wine creates a deep flavor that is both comforting yet subtle. I enjoy the flavors of white wine more than red wine in cooking because they are deep flavors but are not heavy! Feel free to replace chicken with the tofu!
