You can make this recipe with any version of chicken. I like to roast it whole or anything on the bone, because it is much juicier and creates a lot of liquid. You can serve this dish with rice or make a whole wheat pasta, add olive oil, salt and the delicious white wine sauce from the chicken!
This dish is easy but so elegant looking. If you have picky eaters at home you can keep some of the chicken plain on the side for them and make the rest of the dish for the non picky eaters!
This fish really tasted like butter. The trick is to buy really fresh fish, it’s so worth it! The jam can be made up to 5 days in advance, just bring to room temperature and place on top of fish and add fresh mint right before serving.
Halloumi cheese salad can be found in most cafes in Israel. It is delicious but often the same. Here is a twist on the usual restaurant salad that can be pulled together in minutes! Tuscany spice blend can be found in all spice shops and sometimes in the supermarket. If you don’t live in Israel but come to visit be sure to pick it up at any spice shop or market, it is world’s better than the other versions and not too heavy to bring back!
This recipe is fun to play around with. Add more fruit and vegetables and proteins if you wish! My top picks would be fresh mozzarella cheese, celery and persimmons (all together!)
