This is a famous Persian green stew called Ghormeh Sabzi. It is not so pretty to look at but beyond delicious. You can find dehydrated limes at all spice shops and in Israel, often in the spice section of a supermarket.
I love the natural smokiness of the eggplant. You could also cook it in your oven on broil but it won’t taste nearly as good. I think it is worth making your stove top a bit ashy for!
Halloumi cheese is just so so good. It is best to eat it fresh from the pan but also is great the next day at room temperature.
I love Israeli salad but it is very time consuming! Here is an alternative that is just as crunchy, fresh and flavorful but hardly any work at all. I used goat feta cheese for this because I love the flavor (and it is much less salt) but feel free to use regular feta cheese or Bulgarian cheese.
