Spaghetti squash is such a fun vegetable! If you have not yet discovered it, google what it looks like and go buy it! Even though it does not taste like pasta, because it turns into very thin noodles, it creates an illusion and can really fulfill your pasta craving without eating any carbs!
This recipe was inspired by finding purple sprouts, but of course you can use any sprouts! Feel free to play around with this salad, since it is so fresh and quick to whip up, add a protein, lentils or your favorite cheese to make it more filling and a full meal in itself!
This salad is so refreshing and takes 10 minutes to make from start to finish. If you are serving it right away, you can skip the step of making the salad dressing in a jar and make it in the bottom of the salad bowl. Whisk well and add the rest of the ingredients.
You will not believe how quick you can pull this ridiculously summery and fancy dish together. You can prep everything the night before and just leave the grilling to ten minutes before you eat.
You don’t have to remove the basil from its stems fully for this, you just throw it in and it tastes amazing! You can really use any kind of chicken for this recipe. If you don’t have shallots you can use a purple onion, it will be almost as good!
