Make extra of the garlic and spread it on challah (or bread). Trust me this roasted garlic becomes an addiction!
If you can’t find yellow beets, just make this with 1 extra red beet. This salad is so light and tastes just like something you would order in a restaurant and love but pay way too much for!
Papayas are a less exciting mango to me. But in Israel when mango season is nearly over we have to compromise. I love to use papayas in salad because its sweetness enhances this dish and the salt and vinegar in the dressing brings out its flavors in a more savory way.
These mushrooms taste meaty! I love that you don’t have to chop them or do anything to them, you just throw them in the oven and they complete the whole salad!
I highly recommend adding a protein to this chickpea purple sprouts salad if it not a side dish to many other dishes. It would go so well with grilled steak or chicken.
