If you have access to fresh limes, use them instead of the rice vinegar! If you don’t like cilantro you can leave it out or replace it with fresh mint. I love Mexican food and this is an easy go to side dish for any Mexican meat or dairy meal!
If you don’t have some of these spices at home, it is worth it to buy them. Once you have them in your home, you can always use them in soups, stews, chicken dishes, potatoes, roasted cauliflower…and you will see, I use them frequently so I promise they won’t sit on your shelf for long!
You can use a can of chickpeas instead of the uncooked ones, but why? It does not save time and this will taste better! If you want to make this an even more interesting dish, add uncooked eggs (in their shells) to the liquid and let them cook inside the stew. (can add 1 more cup of water too) The eggs will turn a golden brown and taste delicious with a bit of salt!
I love Moroccan cuisine! I love how they incorporate cinnamon into a savory meal! If you don’t have all of these spices at home, I encourage you to invest in them and then anytime you see paprika in a recipe, add a little sumac too.
This is such a great dish and takes no time to make! Add your own favorite fresh herbs to it; my top choices would be mint, cilantro or basil (or all three!)
