I love butternut squash, but i love even more when there is a spicy component to amp up its sweet flavor! If you like spicy Mexican food, this dish was invented for you. If you don’t, you can leave out half the spicy pepper, take out the seeds and remove the cilantro and this would still be incredibly delicious, just more subtle.
This dish is surprisingly filling, I figured 2 sweet potatoes per person, but if you are serving a lot of other things then figure ½ to 1 sweet potato per person.
I know this dish seems foreign to you, with ingredients you don’t recognize but I promise you they are flavors you will not want to miss. You can find all the ingredients at a specialty Asian market or most of them in a spice shop. If you can’t find certain ingredients, ask me about substitutes!
This is a much lighter, more colorful and more flavorful version of the grilled cheese you might be used to! I love this dinner because it is two for the price of one with the same amount of work!
If you don’t like spicy food at all you can substitute the spicy peppers with thinly sliced regular bell peppers!
This is such a fun sandwich! Feel free to use wraps instead or no bread at all! This is a very spicy dish so be sure to remove the seeds from the peppers if you don’t want it too spicy!
