This is a great vegetarian and vegan dish but it would taste great with tofu, chicken or beef. Always sear the protein first, then remove it add the rest as instructed and put the protein back in last minute.
Fish sauce and palm sugar can be found at any Asian market, they have such mouthwatering flavors that you don’t have to worry about not using them again and again!
Besides this dish bursting with sweet, spicy and sour flavors, everything except the steaks can be made up to 3 days in advance! Just grill the steaks right before you are ready to eat. The rest bring to room temperature.
Matbucha is a cooked dish of roasted tomatoes, peppers, garlic and chili peppers. The name of the dish originates from Arabic and means “cooked salad”. It is beyond delicious and I love making extra to put in my sunny side up eggs, in sandwiches, as the base to my shakshuka, on top of chicken, salmon etc.
This is my version of sweet and sour chicken. You won’t feel heavy or gross after and you will love the light flavors. This reheats remarkably well because you are cooking the chicken until it is just done, not overcooking. If it is quicker for you, you can put all the ingredients in a food processor or blender instead of chopping it all! If you don’t like cilantro or peanuts you can use cashews, almonds and fresh mint or basil or just eat as is!
