Everyone has that token vegetarian or vegan friend, and once in a while people just want new tofu recipes for themselves. Here is an easy dinner recipe (with barely any cooking involved!!!!!)
I love the simplicity of this dish! Be sure to strain and mix the cottage cheese before using it so it is not too liquidy. Feel free to play around with it and use asparagus or green beans instead! You can use Parmesan cheese instead of cottage. I like to use more sugar snap peas than pasta so you fill up on vegetables but still fulfill your pasta craving!
I love this colorful one pan wonder! Feel free to use asparagus, green beans, broccoli, cauliflower or any other vegetable you love more! You can also use any fish in this recipe, if the fish is salmon or something thicker, be sure to cook it for longer.
Here is my version of this popular salad! Feel free to mix and match your favorite items or throw in other things as well such as roasted peppers, pomegranates, oranges, mushrooms and sprouts. If you don’t like anchovies substitute them with dijon mustard and keep the rest of the dressing the same.
