Here is my version of this popular salad! Feel free to mix and match your favorite items or throw in other things as well such as roasted peppers, pomegranates, oranges, mushrooms and sprouts. If you don’t like anchovies substitute them with dijon mustard and keep the rest of the dressing the same.

These gluten-free latkes are always a hit because they have such gorgeous color, flavor and are cheesy when you bite into them! They are so flavorful that you don’t even need any toppings! You can make them hours in advance and just warm them up in the oven right before serving.
Tips for successful latkes: Drain as well as you can. Don’t make too many at a time and don’t move them or touch them in between. Use a spatula and a wooden spoon to turn the latke to its other side. If your oil gets dirty and bubbly, pour it out and pat the pan dry and use fresh oil for the next batch.

You can make this soup as thick or thin as you wish. I love thinner soups, especially when I add rice noodles, because then I can slurp them up like ramen!

This soup is so hearty and great if you are having a crowd on a cold day. I put regular dried black beans in and they were fully cooked within 2 hours.
