I love this colorful one pan wonder! Feel free to use asparagus, green beans, broccoli, cauliflower or any other vegetable you love more! You can also use any fish in this recipe, if the fish is salmon or something thicker, be sure to cook it for longer.
This recipe is so fun because it is SO fast! If it is not tomato season where you are, please don’t use fresh tomatoes, use canned, otherwise this dish won’t have any flavor.
Make a double batch of the tomato jam and use it in pasta, on grilled chicken, in sandwiches or even mixed with warm spinach as a side dish!!
