Osso Buco is a veal shank. It is an incredible cut of meat that has a flavorful marrow bone attached to it. Go to any butcher and ask for Osso buco and they will know what you are talking about. This recipe goes great with a brisket, short ribs or a shoulder roast too!

In Israel, this meat is number 2 or number 3. But you can make this with any cut of meat that can be cooked in the oven in liquid for a long period of time (braised).

You know that sweet chili sauce in the bottle that everyone buys? It’s filled with preservatives and chemicals that you don’t need but people really love the flavor. I recreated it in this dish but instead used fresh ingredients. These got finished in 4 minutes.

There is nothing like a whole fish, it is more tender, flavorful and a whole different experience. But if the bones are too annoying or if the idea of a whole fish is just not what you are emotionally up to right now, try this exact recipe with any fish filet, leaving the skin on and instead of the first 4 minutes, just sear them for 2. Everything else about the recipe can stay the same.

This chicken is divine. The secret is high quality soft dates. It makes all the difference. But it is sweet and spicy and everything in between, the chicken is so soft and dripping with flavor. This dish is even better reheated!! Invest in a dutch oven, you wont regret it! This picture was taken before it went in the oven, it has a beautiful glow when it comes out!
