Chickpea avocado salad
This is an extremely filling salad that pairs perfectly with a protein! If you can't find ripe avocados, you can always make it a chickpea salad and add more fresh herbs or lettuce.

  1. If you are using canned chickpeas, skip this step. Soak chickpeas overnight in water and then drain. Add chickpeas to a pot filled with water and boil for an hour and a half or until cooked and soft.
  2. Preheat oven to 425°F. Prepare a large baking dish with parchment paper. Place chickpeas in a baking dish and add the olive oil, fresh garlic, zaatar, sumac and salt. Cover and place in oven for 15 minutes.
  3. Remove and add the rest of the ingredients to a bowl and serve room temperature. Add a bit more olive oil and salt to taste if needed.
Perfect marinated schnitzel
 I typically don't use ingredients that are from a but this recipe was inspired by having really high quality jam from a winery.  Often people go places, and buy really beautiful jams and then wonder what else they can do with them besides putting it on toast. So here you go! If you don't have jam of this flavor you can just use honey or silan instead

  1. Add all the ingredients except the chicken to a baking dish and mix together.
  2. Add the chicken and mix until each piece is evenly coated and marinated.
  3. Marinated for as long as you have. (15 minutes - overnight)
  4. Prepare a large grill pan on high heat and get hot. Add the chicken and grill for 1 1/2 - 2 minutes per side. Eat right away.
Notes & Tips:

If you don't have jam (any flavor would be great) then you can just leave it out or use a bit of honey instead
