Kale chickpea salad
If you don’t like anchovies, this dish IS FOR YOU! It is not fishy at all, just salty, garlicky, fresh and delicious!

Ingredients:

  1. Chop the anchovies until they become a paste (or use a mortar and pestle)
  2. Add them to the bottom of the serving bowl, add the rest of the ingredients except the kale and chickpeas and whisk well.
  3. Add the kale and chickpeas and marinate until it is evenly incorporated. Salt to taste.
Notes & Tips:

Feel free to add anything else you please to this salad, like peppers, purple onions, tomatoes, peas or corn!

Perfect grilled cheese sandwich
This is so crunchy and gooey but also healthy! Feel free to play around with this recipe with your favorite fillers and cheeses! I love mustard in mine but that is up to you!

  1. Prepare a large skillet on high heat. Add the olive oil and get hot. Add the tomatoes, salt and pepper and let cook for 5 minutes or until slightly blackened.
  2. Remove from heat and wipe out pan with towel.
  3. Get pan hot and add the bottom of the pita, add the cheese, tomatoes, basil and top of pita and cook for 2 minutes on each side, pressing it down a few times until cheese is fully melted.
Notes & Tips:

Don’t worry that the fresh basil turns a bit black it is still delicious!
