Mediterranean fresh salad
If you are eating this salad by itself (not as a side to pasta) feel free to add grilled chicken, steak, tofu, cheese or tuna! It’s a great appetizer salad too if you want to add pulled fish.

Ingredients:
- 4 ounces baby spinach
- 2 plum tomatoes sliced
- 1/2 cup Olives wine infused
- 1/2 cup rice vinegar
- 1/4 cup extra virgin olive oil
- 3 tablespoons fresh basil chopped
- 1 tablespoon sugar
- 1/2 teaspoon salt pink Himalayan
Directions:
- Add spinach, tomatoes and olives to a salad bowl.
- In a separate jar mix together the rest of the ingredients, shake well and pour over salad right before serve.
