Sundried tomato salad
This salad dressing makes the salad! If your sundried tomatoes come in olive oil use that oil instead of regular olive oil and it will be even more flavorful. Make double the amount of dressing and use it as a marinade for chicken or in a cold pasta salad!

Ingredients:
- 4 ounces dark mixed greens
- 1/2 can chickpeas
- 8 cherry tomatoes cut in half
- 1/2 purple onion thinly sliced
- 1/4 cup sundried tomatoes in oil
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon salt pink Himalayan
- 1 cup fresh basil stems removed
- 1/2 cup Balsamic vinegar
- 2 tablespoons brown sugar
Directions:
- Add sundried tomatoes, oil, salt, basil, vinegar and sugar into a food processor and mix until smooth.
- In a large bowl add the mixed greens, chickpeas, tomatoes, and onion. Dress right before serve.
Notes & Tips:
Taste for salt at the end, sometimes the sundried tomatoes come with salt and sometimes not.There are three things that when in a time pinch I will use from a can instead of fresh : canned chickpeas, canned corn and canned tomatoes. That's it!!!
