Sunny side-up sandwiches
Everyone loves a good sandwich. This recipe is great for breakfast, lunch, or dinner. The key is to buy high-quality ingredients. The fresher the bread and the higher quality the cheese, the more delicious it will be! Feel free to add and subtract your own ingredients.

  1. Prepare a large skillet on high heat. Add 1 tablespoon olive oil and heat. Add the pepper, onion, and ½ teaspoon of salt. Mix well. Cook for 5 minutes, mixing often. Remove and wipe down pan.
  2. Add 2 tablespoons of olive oil and heat. Crack and add the eggs and cook for 5 minutes (so they are sunny side up and slightly runny). Sprinkle with ½ teaspoon of salt and set aside.
  3. Wipe out pan and add bread face side down. Let get slightly brown, about 4 minutes. Remove from pan and set on cutting board.
  4. Add cheese, then add the egg and then pepper mixture. Top with fresh basil. Cover with other slice of bread and eat right away!
Notes & Tips:

If you are not a Swiss cheese lover, feel free to substitute with your favorite cheese; my top choices would be gouda, fresh mozzarella, emmental, or cheddar.
