Sunny side-up sandwiches
Everyone loves a good sandwich. This recipe is great for breakfast, lunch, or dinner. The key is to buy high-quality ingredients. The fresher the bread and the higher quality the cheese, the more delicious it will be! Feel free to add and subtract your own ingredients.

Ingredients:
- 8 eggs
- 3 tablespoon extra virgin olive oil
- 1 1/2 teaspoon salt pink Himalayan
- 1/2 purple onion thinly sliced
- 1 red pepper thinly sliced
- 2 baguettes sliced into thirds and then halved
- 8 slices Swiss cheese
- 1/2 cup fresh basil
Directions:
- Prepare a large skillet on high heat. Add 1 tablespoon olive oil and heat. Add the pepper, onion, and ½ teaspoon of salt. Mix well. Cook for 5 minutes, mixing often. Remove and wipe down pan.
- Add 2 tablespoons of olive oil and heat. Crack and add the eggs and cook for 5 minutes (so they are sunny side up and slightly runny). Sprinkle with ½ teaspoon of salt and set aside.
- Wipe out pan and add bread face side down. Let get slightly brown, about 4 minutes. Remove from pan and set on cutting board.
- Add cheese, then add the egg and then pepper mixture. Top with fresh basil. Cover with other slice of bread and eat right away!
Notes & Tips:
If you are not a Swiss cheese lover, feel free to substitute with your favorite cheese; my top choices would be gouda, fresh mozzarella, emmental, or cheddar.
