This recipe was inspired by the amazing purple potatoes in the market, but of course, you can substitute regular potatoes or sweet potatoes for an equally as delicious recipe.
I created this recipe because so often I crave pasta and meat sauce and this is a carb free alternative and I cut the cauliflower in pieces that remind me of ziti!
This is a great way to introduce dark greens into your eating habbits. You don’t taste the kale strongly but it provides a nice flavor that pairs beautifully with the mangoes. I used fire roasted peppers (placing them on sheet pan on broil, turning every 6 minutes, until skin charred. Letting cool and peeling. But you can use raw, or roasted peppers from a jar too if you want to make this recipe quicker!)
Cooking the tofu directly in the white wine creates a deep flavor that is both comforting yet subtle. I enjoy the flavors of white wine more than red wine in cooking because they are deep flavors but are not heavy! Feel free to replace chicken with the tofu!
