Chia seed coleslaw
Chia seeds have a very long list of nutritional values including helping diabetes, digestion, speeding up your metabolism, weight loss, energy boosting etc. They have a slightly nutty flavor and give the coleslaw an extra crunch but are discreet and small enough that if you wish they weren't there you barely notice them but still get all the health benefits!

  1. In a large bowl, add the chia seeds, rice wine vinegar, honey, mustard, olive oil and salt and whisk well. Remove 4 tablespoons of it for the sandwiches.
  2. Cut cabbage into 4 pieces (around the core) and then thinly slice and add it and the apples to the bowl. Mix well and serve.
Notes & Tips:

Feel free to add color to your coleslaw with fresh celery, peppers, oranges, dried cranberries....Enjoy the crunch!

Turkey sandwich
There is nothing like a good turkey sandwich! It needs to be great bread that is toasted on the outside and soft on the inside. It needs to have the right amount of bread to turkey ratio and lots of flavor. I know there is an extra step here with placing the lettuce and avocado into a bowl and dressing it before putting it in the sandwich but this little trick is the secret to all sandwiches that have lettuce in them.

  1. Place lettuce leaves and avocado slices into a medium sized bowl and add remaining dressing from coleslaw (chia seed coleslaw), mix well and set aside.
  2. Prepare a grill pan on high heat. Place the bread on the grill pan for 5 minutes per side.
  3. Remove and spread with mustard and honey. Add turkey, lettuce and avocado and eat soon after!
Notes & Tips:

Always dress the lettuce with good dressing it will make the biggest flavor difference in the world!

Change things up a bit! 
  • Prepare extra bread on grill pan and let cool, spread with mustard and honey and place in sandwich bag
  • In a container place turkey, toppings (except lettuce) and slaw all together and when ready to eat place all contents in the sandwich – like a deli but sooo much better!
